Situated at Davayé, 2km west of Macon, the Domaine des Poncétys is not only a great and ancient winery but also a winemaker training center and an agricultural college. Created in the 17th century the Domaine is controlled by the state which has turned it into a reknown wine school. The students tend to the vines all year long while M.Servais (see photo above) manages the winemaking and aging process.
The winery produces mainly AOC Saint-Véran wines made with a very unique technique developped by M.Servais: the low temperature slow fermentation process. Indeed, the grapes ferment between 6 to 9 months at temperatures as low as 11°C (!) thanks to a specific kind of yeasts naturally found on the vines of the area. The result is amazing, the wines are very smooth, refined and elegant. The minerality is of an incredible quality, aromas are clear and sharp, the texture perfectly balanced and smooth.
