Domaine Pouderoux is a familial estate situated in the very south of Languedoc, near the Spanish border. Set back from the plain of Roussillon, Maury terroir benefits from a specific microclimate and geology: black shale and clay and limestone marl which confer it the privilege of elaborating wines of exceptional flavor and power. The Maury Domaine wines come from vineyards located in the heart of the appellation, exclusively in the municipality of Maury.
The Maury are powerful wines that are particularly suited to a long oxidative maturing process. But when young, with a balance of red and black fruit, emphasizing the finesse of tannins and aromatic persistence, they are a true revelation. A grape variety is identified with Maury: the Grenache Noir, capricious, with a low yield. For us, it guarantees the Maury quality and is the grape variety we use exclusively. The harvest is systematically collected on a sorting table. The wine which is bottled in June, following the harvest, will then undergo a slow maturation process. We elaborate our vintage «Vendange» following this tradition. For the «Vendange Mise Tardive», the aging in wood takes place in air-conditioned cellar to regulate the oxidation phenomena in the best way. The «Hors d’Age» represents the evolution of a «harvest» over time, concentrating its aromas further and polishing the tannins by aging. Aging in cylinders exposed to the sun is performed on some «Grande Réserve» cuvées!
We have always considered that the winemaker must respect the environment; and have forgone the use of chemical fertilizers long ago and returned to working the soil. However, we have given priority to the quality of the wine and have taken the time necessary for a genuine conversion, not simply following a fashion. Today, the Domaine is proudly certified «organic.»
